Sesame & Ginger Marinated Salmon
Asian style dishes have to be one of my favourites. The flavours in this dish are amazing, and rivals asian takeaways. I’m sure you are already aware of the health benefits of omega-3s such as inflammation, brain function and heart health.

Ingredients
1/4 cup oyster sauce
1 tsp sesame oil
2 tbs sesame seeds
1 fresh long red chilli (thinly sliced)
4cm piece ginger, grated
1/4 cup apple cider vinegar
4 x 120g Salmon (skin on or off)
1 bunch broccolini or gai lan
200g snowpeas
2 zucchini peeled into ribbons
4 spring onions, sliced.
1/2 med avocado, sliced
Lime wedges to serve
So I have to admit, even though there are great health benefits to eating fish, I just don’t eat enough. If I’m told the fish tastes like chicken, I’m in!! However, this salmon dish has to be the exception. I’m in love xx
Step by Step Instructions
Step 1
Combine oyster sauce, sesame oil, sesame seeds, sliced chilli, ginger & 1 tbs of vinegar in a bowl.
Step 2
Pour mix over salmon and marinate for 20 minutes.
Step 3
Place salmon on baking tray (skin side down if using) and spoon over marinade. Cook under grill for about 5 minutes until cooked to your liking (I like mine cooked right through).
Step 4
Cover broccolini and snow peas with boiling water to blanch. Then rinse in cold water and combine with zucchini, spring onions, remaining vinegar and avocado.
Step 5
Serve green veg topped with cooked salmon and lime wedges.
